Burfi or Barfi it’s a fudge from Pakistani and Indian cuisines, it is a dense milk based sweet and the name is a derivative of the Persian word barf, which means snow.

Ingredients
- ¼ cup Butter
- ¾ cup Milk
- ½ cup Sugar
- 2½ cup Milk Powder
- 1 tsp cardamom powder / Elaichi powder
- 3 tbsp Nuts,chopped (almonds, pistachios..)
Instructions
- In a large Pan add the Butter then the Milk, keeping the flame on low add in the Milk Powder.
- Followed by the Sugar and Cardamom.
- Stir continuously making sure everything is combined well and sugar dissolved, keeping the flame on low and no lumps formed.
- Keep stirring on a low flame till milk thickens and forms a dough it takes about 10 mins.
- If the dough separates from the pan Your burfi is ready!.
- Transfer the Burfi into a dish lined with baking paper, press with your hand or spatula forming a block.
- Add the chopped Nuts and press slightly.
- Set aside for few minutes until it sets completely.
- Once it's chilled take it out of the dish and cut it into Diamond or square pieces.
- Serve you Burfi with a nice Pakistani black tea
Notes
- DO not over cook it or it turns chewy!!
- YOU can store the Burfi in airtight containers for 15 days.
