Ingredients
  1. 500g fresh beef minced
  2. 1 packet spaghetti
  3. 1 beef stock cube
  4. 2 tbsp Tomato Puree
  5. 2 canned diced tomatoes
  6. 1 onion, diced
  7. 1 carrot, finely grated
  8. 2 cloves of Garlic, finely chopped
  9. Handful of Fresh Basil
  10. Freshly grated Parmesan Cheese
  11. 2 tbsp olive oil
  12. 1 fresh bay leaf
  13. Salt and Pepper.
Instructions
  1. Place a large saucepan on a medium heat, add olive oil and fry onion until golden, add carrots and garlic and keep frying until carrot tender.
  2. Stir in canned tomatoes, add the minced beef and let it browned.
  3. Add the tomato puree, basil, stock cube and bay leaf, season with salt and pepper and increase the heat slightly, cover the saucepan and simmer for 30 minutes, giving them a stir occasionally
  4. Add the parmesan during the last 5 minutes of cooking and stir till melted.
  5. Bring a pot of lightly salted water to a boil and cook the spaghetti according to the packet instructions, drain and serve it topped with the bolognese sauce

Ingredients
  1. 3 large tomatoes, peeled, diced
  2. 1 large onion, finely chopped
  3. 3 garlic cloves, minced
  4. 1 tablespoon tomato paste
  5. ¼ tablespoon fennel seeds
  6. 1 teaspoon paprika
  7. ½ teaspoon chili flakes
  8. ½ teaspoon Italian seasoning
  9. ½ teaspoon sugar
  10. ¼ tablespoon fennel seeds
  11. Salt and Pepper to taste
  12. ½ cup water
  13. 2 tablespoon extra-virgin olive oil
Instructions
  1. Add in a large stock olive oil sauté the onion, add the tomato diced stir for 5 minute or until tender add in the garlic, tomato paste and spices, pour the water and cover to gentle boil and cook for about 10 minutes, reduce to a simmer and uncovered for 5 minutes or until the liquid has evaporated.
  2. Transfer the sauce into jars and refrigerate until needed.
Notes
  1. Make sure that fresh tomatoes are deep in colour and juicy otherwise use the canned ones.
